Homemade Zucchini Quiche
Easy and Tasty Zucchini Pizza
The original recipe is from here
Ingredients:
- 1 pizza crust
- 2 tbsp olive oil
- 4 oz buffalo mozzarella
- 1 zucchini
- 0.5 lemon
- 0.5 cup pesto
- basil
- salt
- pepper
Instructions:
- Preheat oven to 450Β°F. Using a fork, gently prick the dough all around to avoid forming any air pockets. Pre-bake the pizza dough for about 3 minutes. Remove the dough from the oven, brush with 1 tbsp olive oil and sprinkle with a few pinches of salt. Tear the mozzarella over the crust and bake for 10-12 minutes, or until the edges are golden brown.
- In the meantime, peel zucchini into strips.
- In a small bowl, toss the zucchini strips with 1 tbsp olive oil, juice of half a lemon, and season with salt and pepper.
- Remove the pizza from the oven and top with the marinated zucchini, dollops of fresh pesto, and garnish with basil, if desired. Drizzle with olive oil and sprinkle with pepper. Serve.

I've become lazy in the kitchen... This salad can be a side dish to any kind of meat. The mashed stuff is Russian zucchini spread. My usual ingredients for the salad: tomato, cucumber, bell pepper, jalapeΓ±o, cilantro, avocado (wasn't ripe yet). Add salt, pepper and Olive oil.
Below average price of zucchinis. What a bargain!
Pro tip: add frozen sliced zucchini into your fruit smoothie, adds volume and vitamins and you can't tell it's there at all

I'm just a single guy without any real culinary prowess and my favorite "quick" meal is a steak with fried yellow squash & zucchini.
So, welcomemod told me to post something that makes me smile. This is 3 year old me with a big ass zucchini in my hands. It makes me happy, cause back then I was full of happiness and now I always come back to this picture a lot of times, when I'm sad.
