Trying to find some new ones!
We used to be a “chicken salad” family every night, easy- chop some veggies (or use a pre-made salad kit), grill some chicken, dinner was done in 15 minutes. Since trying to be more vegan, I often find myself in the kitchen for at least an hour - mixing this, baking that. It’s just not practical for week nights. I would like to go back to the salad kits, but they simply aren’t enough on their own. Anyone have ideas of what can be added that isn’t animal based to help bulk up the salads and stir fry’s?
Tofu only goes so far, though I have found that I can get pre-made vegan falafels that work great on any Greek dish. Anything else like this?
