Cultural differences in preparing/cooking tofu

So I've noticed that this sub really likes to advocate for pressing tofu, but over on the Subtle Asian Vegans page on Facebook there's a post asking if anyone in the group has ever pressed tofu or used a tofu press and most of the comments were a resounding "no." Coming from an Asian family myself (Vietnamese), my family has never pressed tofu, either. We generally just cut the tofu into squares and then pat each square dry with paper towels before throwing them into the pan and frying them. Also rather than pressing tofu, freezing tofu seems to be more common among Asians. Another thing I've noticed that a lot of Westerners like to marinade tofu before cooking it whereas in Asian cooking, the marinade is usually added during the cooking process if the recipe calls for it.

Curious what everyone's background is and how they prepare tofu.

Got banned from the Easter dinner table today for telling my relatives to stop commenting on how "weird" my tofu sausages are while munching on pig assholes

Of course I was the aggressive one even tho it was the only thing I said after they burned all my food on the grill and "lost" one of my marinated tofu fillets and hours of listening to "oh...tofu? I painted some Inari Sushi! Itโ€™s not too common outside of Japan, but I always recommend it to vegans visiting Japan. The simple version is made with sushi rice wrapped in sweetened fried tofu, but you can sometimes find colorful veggie ones like this too!

Fuck tofu. It's so unethical. But I'm waiting for lab grown soy before I give it up.

Don't get me wrong. I love tofu. I just wish some farms wouldn't mistreat the beans in the way that they do. In a perfect world every vegetable would be treated with kindness but that just isn't reality.

I am waiting for lab grown legumes. And by waiting I mean not really waiting because I'm still buying and eating them.

Where the heck has all the firm and extra firm tofu gone??

Maybe it's just my area, but I haven't been able to find any for weeks.

I've been to downtown H-Mart, two different Superstores, Safeway in Mission, and Amaranth on 4th.

Tomorrow I'm going to check Midtown Co-Op. This has become my mission now and I'm determined to find some tofu.

To be clear, this is FIRM and EXTRA FIRM tofu for stir fries and whatnot, NOT the soft stuff for smoothies and desserts.

What are your favorite low calorie & oil free sauces and seasonings for roasted veggies and tofu?

For the last few weeks I've been on a roasted veggies and tofu kick for my dinners because it's healthy, quick to make, and fits into my protein and calorie goals. I was using coconut oil at first, but realized recently that I can make it healthier and save a lot of calories by roasting them without the oil. To keep it interesting, each week I've been switching up the sauces/seasonings, which are also oil-free. So far I've used za'atar, herbs de provence, a lemon dill cilantro tahini sauce, and a vegetable based cheeze sauce. I'm looking for some more low calorie and oil-free sauces or seasonings I could use please.

Tofu aus dem Asiatischen Supermarkt - Ein Selbstversuch, Teil 1

"Wenn du richtig guten Tofu willst, dann musst du in einen Asiatischen Supermarkt gehen. Das, was du im Deutschen Supermarkt bekommst, ist absoluter Mรผll."

Solche und รคhnliche Sรคtze liest man รถfters auf Reddit, wenn es um das Thema Fleischalternativen geht. Bisher konnte ich solche Aussagen nur schwer nachvollziehen, weil ich mit dem Tofu vom Edeka eigentlich immer sehr zufrieden war. Ich schneide den Tofu (Natur) immer in kleine Wรผrfel, die ich dann mit viel ร–l in der Pfanne anbrate, ein bisschen Paprika und Curry rein und am Schluss mit japanischer Sojasauce ablรถschen. Das ganze schmeckt so gut, dass ich davon immer gleich 400g fรผr zwei Personen machen muss, weil der Tofu sonst alle ist, bevor das Essen auf dem Tisch steht.

Heute habe ich mir aber รผberlegt, doch einmal auf Reddit zu hรถren und habe einen Zwischenstopp beim Asiaten eingelegt. Im Kรผhlregal gibt es beim Natur-Tofu mehrere Festigkeitsstufen. Ich entscheide mich schlieรŸlich fรผr jeweils eine Packung "Pressed Tofu", "Yakko Tofu" und "Tau Kwa". Der "Pressed Tofu" ist laut Packungsangabe ideal zum Braten und Frittieren, der "Yakko" ideal fรผr Misosuppe und der "Tau Kwa", der als etwas fester beschrieben wird, universal einsetzbar. Ich entscheide mich, im ersten Schritt einfach mein bewรคhrtes Rezept mit dem "Pressed Tofu" auszuprobieren.

Ich schneide also die Packung auf (warum kriegt es eigentlich so gut wie kein Tofu-Hersteller hin, die Blรถcke in eine Verpackung zu legen, die sich weniger aufwรคndig รถffnen lรคsst?) und gieรŸe die Flรผssigkeit ab. Um das Braten zu erleichtern, versuche ich als unwissender Banause, den Block noch etwas auszudrรผcken, wobei ich ihn beinahe zerstรถre. Besser nicht mehr drauf drรผcken. Ich schneide den Tofu in Wรผrfel. Das Messer gleitet hindurch, wie durch Butter. Wie gewohnt werfe ich alles in die Pfanne und beginne, zu braten. Durch das Pressen habe ich vermutlich die strukturelle Integritรคt des ganzen Blocks beschรคdigt, denn die Wรผrfel zerfallen an vielen Stellen in kleinere Teile. Insgesamt wirkt das Ganze aufgrund der weicheren Konsistenz sehr empfindlich, weswegen ich beim Wenden besonders vorsichtig sein muss.

Wรคhrend der Tofu in der Pfanne brutzelt, รผberfliege ich die Nรคhrstoffangaben der unterschiedlichen Blรถcke. Die Angaben des "Tau Kwa" entsprechen am ehesten dem bekannten Supermarkttofu, wรคhrend die anderen beiden Varianten deutlich weniger Nรคhrstoffe enthalten, was mich darauf schlieรŸen lรคsst, dass der Wasseranteil hier entsprechend hรถher ist.
