Frage zu Sauerkraut im Bett
Hallo,
ich habe 2 Dosen Sauerkraut (Hengstenberg, je ~800g). Die Dosen sind stapelbar und lassen sich ohne Dosenöffner per Lasche aufziehen. Weiß jemand mit wieviel Kilogramm diese Dosen im gefüllten, verschlossenen Zustand belastet werden können?
Es ist nämlich leider so, daß bei meinem Bett die Leiste gerissen ist. Das Bett ist 220cm lang und der Holzrahmen ist an eben dieser 220cm langen Seite gerissen bzw. gebrochen, die Matratze sackt nun entsprechend runter.
Zufällig haben diese 2 Dosen Sauerkraut jetzt genaue die richtige Höhe um die gerissene Stelle abzustützen. Ich bin mir jetzt nur nicht sicher ob ich mich da nun drauflegen kann ohne daß die Dosen aufplatzen und mir eine Sauerkrautapokalypse bevorsteht.
Kennt sich jemand aus?

Hello 👋 I ferment or dehydrate most of the vegetables I harvest in my urban garden. You could also make infused oil or dehydrated sauerkraut.

I am so ready for fermenting season 2021 with my new oldschool pickling jar. Right now there's a bunch of habanero sauerkraut, next stop kimchi. Hoping for bountiful harvest of peppers later.

The strict water fast just doesnt work for me. I can do it but having a bowl of seafood broth with jalapenos and sauerkraut when I come home makes the whole month sooo much easier to handle.
Im 'fasting' for weightloss but Ive just found that every other day or so having a bowl of broth (with my favorite two ingredients added) just keeps my spirits up (even though it puts my bowels into an uproar).
I guess I just wanted to remind people that there are no rules to this game if weightloss is your goal (aside from watching electrolytes). Do what helps you stay on the track.
What to ferment first? Kimchi? Sauerkraut? Pickles? Can't decide.

My wife is from North West Ohio and loves Sauerkraut on her pizza (this is a thing there). With all the German influence in Cincinnati, is there any local place that does this?

EVERY YEAR as a New Years tradition people eat sauerkraut and it smells awful when people are cooking it and it tastes terrible. It’s supposed to be good luck or yadda yadda but I just literally can’t even stomach the smell of it, let alone the taste.
Every time I sell sauerkraut when I’m working at the grocery store I internally scream and want to yeet it away from me. On that note, Happy New Year and I hope y’all don’t eat sauerkraut lol.

First time making a Reuben, and it was amazing! Couldn’t decide between corned beef or pastrami, so I used both. Also threw in some homemade sauerkraut.
Seasoned these brats with ancho chili powder, red cayenne pepper, black paper, and garlic salt. Then topped with sauerkraut (obviously), Fresno peppers, mustard, and secret aardvark hot sauce. Soooo good!

Where to find locally made bulk sauerkraut and other cultured veggies?
I'd be happy to eat like 2 gallons of saurkraut each month. I buy it from Polish Market right now.
I would very much prefer to buy in "bulk" from a locally made source. i.e., I want to show up, see a barrel of saurkraut, get a bag full or stick it in my 1 gallon jar, pay and go. Something like that.
Any ideas?

Happy New Year all! The is my first post as I’ve just found this place and only just started fermenting this last week or so! Have always loved sauerkraut and really keen to see what I can make!
My question is around sauerkraut and whether it’s possible to have too much liquid in it. I made my first ever batch using a red cabbage that I had left over and I added water to cover but now that it’s settled a few days, the brine sits a couple of inches above the cabbage. It’s a 3 litre kilner jar and the cabbage comes about half way up. Is that likely to be a problem? I could easily remove some of the brine (and perhaps use that with a future batch - does anyone here have experience of that?)
Also - the house isn’t that warm at the moment, because we’re in winter and experiencing a lot of snow, so should I take the jar from the kitchen worktop and into the cupboard where the boiler lives to get things moving?

Sauerkraut question
Hello! I made sauerkraut and it’s been about three weeks and is not tasting very tangy. I realized I used 2% salt to the water, rather than 2% salt to the weight of the cabbage. There are bubbles and it seems to be active. Will this mess up the flavor?
