Would basmati rice or a combination of basmati and orzo work best for risotto?

I have been wanting to make risotto for my significant other for a while. Yet, I have not had access to the traditional rice. Today, I picked up some basmati rice and was considering if I could use basmati for risotto. I searched here and Google and found some interesting discussion about using any grain. But that the starch is important. My significant other has never had risotto before and while I have never made it, I am the granddaughter of a first generation Italian immigrant. I want my significant other to get an idea of how it really tastes with the creaminess. So, should I scratch the plan entirely, use just basmati, or use a combination of basmati and orzo? If the later, does anyone have any suggestions for cook time or ratio? I was considering 50/50 basmati/orzo started all together.

Edit 2: Thank you all for the advice. I am going to make risotto with arborio and possibly sushi rice when I can get some. Not having a working car right now has me very limited (Vermont is like that) so I am going to splurge on some rice online. After all your comments, I am thinking I need to start learning more about kinds of rice and rice recipes as it is an area of cooking that I have not delved into much. With the Basmati, in the comments, someone suggested Biryani so I may make that this coming weekend.

What I did: I cooked some onion and garlic in olive oil, toasted the risotto, added the hot stock, whisked vigorously consistently but not constantly, and then at the end added in a very generous amount of freshly grated parm and a tablespoon of butter. After tasting it, I added the peas and let them cook in the residual heat to cut the parm. It was tasty and risotto-like- different than my past efforts with just cooking orzo in broth and different than risotto. I did not time out how long it took, as it cooked I tasted it, and added about 1/4 more broth near the end as it needed a little more, I left the orzo a little al dente, and between that and the toasting, it was not too mushy.

Accidentally Made Brown Jasmine Rice Risotto and it was Magnificent

OMG you guys I'm seriously!

GF accidentally bought Brown Jasmine Rice the other day in lieu of white Jasmine rice which I use frequently. I had never tried to cook Brown Rice before, so I figure let's give it the ole quarantine try. I had an Italian Porky Fennel Meatloaf on the Weber, so I thought a nice rice pilaf would be lovely.

I made some chicken broth using chicken base and a big handful of fresh herbs from garden (flat leaf parsley/thyme/chives), let that simmer a while and added a pinch of salt. It was around 4 cups.

Closer to dinner time I melted 1/4 cup butter in saucepan, added some onions, garlic, and sauteed 2 cups uncooked Jasmine Brown Rice until fragrant and translucent. De-glazed with Vouvray, a Chenin Blanc white wine we love.

I's stupid, so when the rice was toasty and ready for some liquid I added 2 & 3/4 cups plain water per the Mahatma package directions, completely forgetting that I had made brothy goodness for this dish specifically. (Yes, I was imbibing and well imbibed at this point).

Dammit.

But then I remember a conversation I had with GF about how her super health conscious parents make brown rice. They double the volume and boil until liquid is a half inch above the rice. Then they cover tightly and let the rice absorb the moisture for 40 mins.

OK, I am adding in the 4 cups of broth, limp herbs strained out, I am not wasting that effort. Bring to boil. I have 2 cups of rice and 6 & 2/3 liquid in the pot. Its going to need to boil down for a while. Lets stir it. Lets have some wine. Lets keep stirring. Its boiling, I am stirring. I am drunkenly and unwittingly stirring it a lot, eventually after 20 mins or so the water level is 1/2 inch above the rice level, so I cover to simmer on low.

30 minutes later. Magnificent Brown Rice Risotto. I added lemon juice just before serving and it was ADORED. Meatloaf was rippin too!

Mushroom Risotto β€” mushrooms while cooking rice, or cooking mushrooms separately? What’s the difference?

I’ve seen a few recipes and videos (from both blogs and big name chefs). I see them adding in the mushrooms two different ways β€” they either cook it with the risotto, or cook it separately and add it in towards the end only of the risotto cooking process.

I’m pretty sure neither is β€œmore correct” than the other, but just wondering what difference it makes. Does it make it more/less mushroom-y? Does it make the mushroom more/less chunky to the chew?

Calrose (Sushi) Rice for Risotto?

My grocery store is out of Arborio rice but I’m craving risotto, so I bought calrose rice, which is usually used for sushi, instead because it was the only short-grain rice they had.

I googled it and it looks like people have mixed results using sushi rice for risotto, some say it’s too sticky, others say it works well.

Does anyone here have any experience or advice for how to adapt my technique for the sushi rice? I’m thinking about 1. giving the rice a quick rinse to get rid of a bit of the excess starch and make it less sticky (risky I know) 2. toasting the rice longer so it’ll hold together better and 3. stirring less, again so it’ll hold together better. Are these good/bad ideas?
