[Homemade] Heirloom tomato and fresh mozzarella grilled cheese with pesto.
I roasted some marrow bones for supper (to have with fresh pesto potato sourdough) and at one point when we were eating my husband asked "So is this rich people food or poor people food?"
It's funny how that can change so much for the same items. Like, previously cheap cuts of meat are now some of the most expensive. I remember reading that lobster used to be something that only the poorest of the poor ate. Even with the example of the marrow bones that I made, I got a whole femur for $10 at the market and it's enough for two dinners for us, plus an enormous amount of homemade broth. Even though the bones are so cheap, I can't find them anywhere except at specialty butcher shops. The sourdough bread probably cost me $1.00 in ingredients. Yet I've seen roasted marrow bones as appetizers at expensive restaurants for $20+.
I'm not even sure where I'm going with this. I just think it's interesting that the concept of 'rich person" or "poor person" food has nothing to do with the actual cost of the food.

Cheaper to buy ready made pesto than to make?
I was thinking about making pesto then I saw that basil leaves are $5. I'm not even sure how long you can keep freah pesto for. Jar of pesto ranges from $3-5. Thoughts?

Today as every Sunday I make my batch of this Vegan Pesto, which only takes 5 minutes and is so flavourful. Love it!

Any creative cool ways to use this stuff I might not know of? Also, say you're cooking protein or something with pesto - would you cook the pesto with the protein or add it on afterward?

I didn't have pine nuts so I used almonds. Add extra parm cheese on top when serving and it is very good. I'm going to try sun-dried tomato pesto next. After that I probably won't make pesto again because it is cheaper to buy ready made at the store.
