Can sweet or dessert foods be as nutritious as "normal" foods? My mother refuses to eat anything not sweet or incredibly fatty. I've started to cook for her and I was wondering if I could change her diet without "changing" her diet?

My mom is letting me cook for her. Every time I cook I put a bit less salt in her food, or if she requests a cake or pudding I put in a tiny bit less sugar. But she notices and gets angry if I change up the recipe too drastically.

She has medical problems due to sodium and sugar. I hate going behind her back but she wants to live, she has no death wish. I just think she doesn't want to or is just ignorant to the foods she eats.

I just want my mother to be here a bit longer.

What are the most nutritious / healthy vegetables to eat daily, and how can someone who doesnโ€™t like veggies incorporate those into their diet?

I am not particularly fond of vegetables. I donโ€™t hate them and can scarf down veggies for the sake of health, but otherwise, I don't like the taste.

Currently, my veggie intake consists of tomatoes, cucumbers, bell peppers, potatoes (not sure if that counts) and carrots; I eat these about 4-5 times a week because itโ€™s always sitting in the fridge and easy to grab. About once or twice a week Iโ€™ll grab a handful of frozen spinach/kale mix to add to a smoothie. Other than that, Iโ€™m not really eating any other vegetables.

Salads are not appealing to me. I donโ€™t really care for things like broccoli, greens beans, celery asparagus, brussels sprouts, zucchini etc.

My question is 1. Are the vegetables that I currently eat โ€œenoughโ€ nutrition / health wise? If not, what other vegetables are best to add to your diet and whatโ€™s your recommendation on how to prepare it?

But Animal Products are Nutritious!

The below is my first (rough) attempt at distilling the nutritional argument for meat eating put forth by Diana Rodgers in her book Sacred Cow.

The goal is to position meat and organ consumption for nutrition in a more positive light. While at the same time pointing out the deficiencies or reservations associated with plant eating. No food group should be outright vilified, and this summary hopefully levels out opinions skewed against meat.

Protein RDA is too low

The current RDA for protein intake is explained in the Dietary Reference Intakes by the Institute of Medicine (ref), which based their original protein recommendations on nitrogen balance studies.

Itโ€™s very easy to underestimate adequate protein levels based on these studies. In fact, here is a direct quote from this report (chapter 10, need to sign in as a guest to download pdf unfortunately):

In adults, it is generally presumed that the protein requirement is achieved when an individual is in zero nitrogen balance. To some extent, this assumption poses problems that may lead to underestimates of the true protein requirement.

The acceptable macronutrient distribution range (AMDR) is defined as โ€œa range of intakes for a particular energy source that is associated with reduced risk of chronic diseases while providing adequate intakes of essential nutrients.โ€ The recommended range for protein according to the AMDR is 10 to 35 percent of caloric intake.

The USDA estimated calorie needs per day recommends a diet of about 2,000 calories per day for average, moderately active women and about 2,600 calories per day for moderately active men. Using 10โ€“35 percent of calories from protein, the reference woman at 125 pounds would need 50 to 175 grams of protein per day, and the reference man needs 65 to 228 grams of protein per day. This makes the commonly accepted 45 grams per day for women and 54 grams per day for men below the AMDR range.

I love all kinds of food. Whether we are talking New American, Thai, Mexican, Japanese, Vietnamese, French, etc., I appreciate them all!

I was wondering today if countries differ from one another in terms of how โ€œhealthy and nutritiousโ€ their cuisine is. Does anyone know? Transforming clay into nutritious soil with worm

I recently got around 20kg of clay soil for my balcony. The reason why I got clay instead of ready-to-go gardening soil is because I am always fascinated by the incredible ability of earthworm in transforming soil quality. So I wanted to see what will happen if I throw some worms in pure clay soil.

I didn't take pictures of the clay soil, but here's what it kinda looks like

The idea is to strictly control the contents of the clay bin, throwing in nothing but organic materials for the worms to consume such as vegetable scraps, brown foliages, and papers. Sometimes I bury them, but most of the organic materials are placed on the surface of the soil.

I started the experiment about a month ago, and the first group of around 30 worms I put in the bin have pretty much died out... It might be because the clay was simply too barren for the worms to obtain any nutrition, and the rate of decomposition of the organic materials was not keeping up with the worms consumption.

Having failed once, I buried a decent amount of organic materials in the clay in advance and put up an earthworm tower that acts as sort of a mini composting can to accelerate the decomposition. I waited for around two days before I introduced a new group of 30 worms to the clay.

As of now, the second group of worm are living happily. I can see burrows forming in the clay and worm castings all over the surface of the soil. I even saw worms crawling out at night to eat and draging foods back into their burrows. I don't know how long it is going to take for the worms to transform the entire bin of clay into good soil, but so far it looks like I can actually start planting on the top few cm of the soil. Looking forward to what will happen!

Foraging: Let's collect tips on how to identify common plants ("weeds") that are tasty and nutritious!

"Weeds" are generally common, hardy plants that require no fertiliser, little water, and survive adverse events; a surprising amount of them are not merely edible, but tasty and healthy.

They will still be abundant if things get really bad with our food supply chains - so it is good to learn how to identify them now. If you pick them for food now, you aren't buying food that needs to be grown with fertilisers and pesticides, wrapped in plastic and shipped for you - you get healthy food for free, and give the planet a rest now.

I used to think that wild herbs must be magical and rare things - but they are so common you can likely find them within 10 m of your home, and probably know a bunch of them - many by name, and more by sight. Because they are so common, there are very many common names for them, so add a scientific one as well.

These are the three things I find almost everywhere and most enjoy:

Stinging nettles. Picking requires a special technique, or gloves - but once rolled, the leaves no longer sting, and they are very healthy and tasty. Can be cooked like salad, or turned into soup; kept many Europeans going during the war.

"Giersch/Ground elder" Common (and natural) in Europe, a very successful invasive plant in the US. Tastes mild, somewhat like parley/carrots, great in smoothies, as salad, as pesto. You can find tons of it, often near fences.

"Sauerampfer/Sorrel" imo, one of the tastiest ones - sour taste. Shouldn't be eaten in excess.

"Poha"- flattened rice tempered with onions, veggies and spices, super easy to make! It is vegan and nutritious.

Flattened rice is tempered with spices and onions making it the perfect way to start the day. This recipe is best for light and healthy breakfast or an evening snack. It tastes great with green chutney or tea/coffee.

Ingredients:

For Seasoning:

โ€ข Thick Poha (aka flattened rice) - 3 cups

โ€ข Turmeric Powder - 1/2 tsp

โ€ข Red Chilli Powder - 1/2 tsp

โ€ข Salt to Taste

For Cooking:

โ€ข Oil - 2 tbsp

โ€ข Finely Chopped Ginger

โ€ข Finely Chopped Onion - 1 Medium

โ€ข Turmeric Powder - 1/2 tsp

โ€ข Red Chilli Powder - 1/2 tsp

โ€ข Finley Chopped Coriander Leaves

โ€ข Salt to Taste

โ€ข Green Chillies (Slit) - 2 nos

โ€ข Urad Dal - 1 tsp

โ€ข Peanuts - 4 tbsp

โ€ข Finely Chopped Carrot - 1/2 cup

โ€ข Green Peas - 1/2 cup

โ€ข Sweet Corn - 1/2 cup

Method:

Poha/Flattened Rice Seasoning:

  1. First add water to poha in a bowl till it submerges completely, you can add more water if you need it. Then rinse it thoroughly for 30s. Leave it as it is for 2 mins till it softens. After two mins drain all water. Just mix it little with spoon to avoid any lumps. You can check poha softness by pressing it with your finger.

  2. Add red chilli powder, haldi, & salt and season the poha.

  3. Keep aside.

Cooking:

  1. Heat a wide pan. Add oil to the pan, when its medium hot add, urad dal & peanuts. Stir them till they are nice brown.

  2. Add green chillies slit, chopped ginger and saute for a min.

  3. To it add chopped onion, salt and saute the onions. Cook till they turn light pink. Donโ€™t overcook them to avoid losing onion taste.

  4. Now add chopped carrot, sweet corn, & green peas.

  5. Next add red chilli powder, turmeric, & salt. Saute for 2 mins.

  6. After 2 mins add chopped coriander leaves and mix.

  7. Add seasoned poha and mix it well, make sure there are no visible lumps in poha.

  8. Switch of the gas, cover the pan and leave it for 2 mins so that poha absorbs all ingredients.

You can add lemon juice before serving.

Now poha is ready. Enjoy!

Tips:

  1. This dish cooks quickly, so stay at the stove to make sure nothing burns. Lower the heat if things start cooking too quickly.

  2. If your poha is too dry, you can sprinkle little bit of water while cooking.

My favorite currently is Lร„RABAR. Has minimal and healthy ingredients. I just wish a version existed with more protein and calories, would make it an ideal camping bar.
