Lentils, Chickpeas, And Other Low Oligosaccharide Legumes.

I've read that lentils, chickpeas, and other lower oligosaccaride ( fart sugars ) can be tolerated on low FODMAP diets, if they are canned.

Supposedly sitting in liquid for a long time in a can lets the oligosaccarides float out.

Would soaking those legumes overnight, then tossing the water do the same thing? How about using something alphagalactose ( fart sugar enzymes ) like kombu or beano do something similar to make those legumes tolerable by someone with fodmap issues?

I guess the only way to know is to try it out.

Does legumes soup mix require soaking?

I have legume cream soup mix from brand Bravolli. It has lentils and peas. The instruction says it needs 50-55 minutes of cooking. It doesn’t say anything about soaking. Do I need to rinse and wash the mixture too? Usually I wash lentils when I cook lentil soup.

How much of the soup mix I should add? It’s 350gram. I usually add 1 cup of lentils to my lentil soup. Do I need to add it all? Or couple teaspoons?

Legumes in paleo

Struggling to get in enough carbohydrates (without grains & legumes)... causing me some issues..

Even if I supplement with enough salt and other electrolytes (other supplements too) if I dip below 125 grams of carbs daily I have a lot of issues... I've done keto for years and it just doesnt work for me long term, my brain needs glucose... I suspect its related to my mental health issues and medications...

It sucks cause cauliflower, spinach, onions, and all the good stuff just has such minimal carbs and they take so much time to prepare...

Any advice? If I eat bananas and pre-cooked potatoes enough the rest of my life as a staple fine for my carbs fine lol

I cooked legumes soup mix, dried split peas in soup are hard

I didn't soak soup mixture. I fried onion, garlic, tomatoes, carrots 5 minutes in sunflower oil, than tomato paste. Then I washed the mixture of lentils and peas and added to soup. I added 1 cup of mixture and 3 cups of water. I boiled it for 40 minutes then I added potatoes and extra water. I boiled soup with potatoes for 15 more minutes.

I tried soup after 1 hour of cooking and the peas in soup are hard and stiff. Also the soup has kinda slightly acidic taste.

What can I do to make peas softer? Can I eat the soup even peas in soup are hard?

Suggestion for Legume-Free vegetarian dish?

Hi all, I've got a recipe request/question!

I am not vegetarian myself but will be cooking for some veg folks over the holidays.

The problem is, together we have a lot of restrictions. There is a legume allergy: peanuts, beans, soy, chickpeas, regular peas, you name it. There is lactose intolerance. There is also strong dislikes for: mushrooms, eggplants, beets, asparagus, and tomatoes.

They tend to eat a lot of salads because you can pick your own toppings. But I was hoping for the holidays to serve something warm and cooked and not just yet another salad. Ideally I'd be able to cook a thing that everyone can have instead of having to make multiple meals. I've been searching online but legumes don't seem like a very popular allergen, so I'm seriously stumped haha.

Any creative ways of using legumes/lentils?

In order to cut down food costs I’m trying to incorporate more legume/lentils into my dinners and would like some fun ideas you may have. I’ll share a few I’ve learned so far. β€’ add brown lentils into spaghetti sauce (like you would ground beef) β€’ make bean balls using bean/lentil + oat flour β€’ making hummus using different types of legumes rather than just chickpeas

I made a vegan Alfredo the other night and was trying to think of how I could've added in beans besides using lentil noodles...

Illuminate me on Legumes

How do I count calories in home cooked legumes/beans? I used a method over on Foodie Fiasco that cooks beans in a 3:1 ratio (3 cups water to 1 cup raw beans) to cook raw fava beans so that they would be less calories according to the method. They did come out a little mushy (though I don’t mind cuz I like mushy beans) but I don’t really know how to verify that it worked and when I just look up the normal calorie counts for fava beans or any type of bean in general I get varying results even amongst same measurements (ie measuring dry vs wet). Can someone help point me to some useful guides or just this baffling buffoon how to track these bothersome beans? :,)
