Indian cooking methods for non-native vegetables (broccoli, collards/kale, brussels sprouts, chard, napa cabbage, escarole etc)
We are constantly being reminded to eat more vegetables, especially the deeply colored green ones such as the above which are particularly nutritious. I've been trying to get into cooking more Indian food recently, but I can't help but notice that the majority of vegetable recipes which populate Indian cookbooks tend to revolve around less nutrient dense vegetables such as cauliflower, various squashes/gourds etc, bitter gourd, daikon, carrots etc, and those which do utilize "deep green" saag vegetables such as spinach, basella and mustard gourds seem to cook them in a fairly uniform manner. I'm wondering what an Indian chef might do with some of the perhaps non-native vegetables listed in the post title?

Hail Mary recipe request - sautéed escarole with potatoes and pancetta.
My 94 year old grandmother is trying to replicate a dish her mother made when she was growing up. It was sautéed escarole and cubes of potato, with bits of fried pancetta throughout. It also contained garlic, and she occasionally made it with white beans instead of potato.
My grandmother said every time she’s tried to make it it comes out “soupy,” which is wrong according to her, so the recipes online of stewed escarole and white beans which are intended to be soupy aren’t what I’m looking for.
Can anyone help me out here? TIA!

Escarole, red leaf, & baby bok choy in a raw salad? Does this go together?
So, admittedly, I'm new to mixing unique greens to make alt salads. Nice quality salad greens have been really slim pickings, so I took a leap and just got what was freshest at the market that I know can be eaten raw.
But, some of these are pretty far away from each other lol. (Guessing the escarole and red leaf go together?) Which ones would you mix together and which ones would you eat individually?
Escarole.. or as we call it "Scadole" soup. Recipe passed down from my Great Great Grandmother from Italy! Yum!
