Chinese yam

Does anyone here have experience growing Chinese yam vines? Specifically the species Dioscorea polystachya (aka Dioscorea batatas and/or possibly Dioscorea opposita).

It's clear to me from reading people's descriptions of the plant on various horticultural websites that it can be quite invasive if left unmanaged, but I'm wondering if I made sure to prune it regularly if one plant would really be a problem in a small backyard garden.

From what I understand, the little bubils that form on the vine of the plant may drop on the ground and form new vines, but I plan on harvesting those to eat, so it shouldn't be a problem.

If you have any experience with growing this plant, would you mind sharing? I'm in zone 7, in western North Carolina (USA). Thanks!

How do i cook Chinese yam/cinnamon vine?

Hello!

My local, Japanese market was out of daikon so I chose a different root - Chinese yam, aka cinnamon vine. What can I do with this?

Any suggestions about how to use this would be appreciated. My google searches weren't fruitful.

I'd appreciate vegan/vegetarian suggestions. Omnivorous options are okay, just know I will be subbing chickpeas for chicken, seitan for pork, and mushrooms for beef.

[FP] My friend just introduced me into the Chinese mountain yam, also known as a Korean yam. Well, I looked at the nutrition facts, and it is keto friendly!
